Onion Boil Pasta
This recipe puts a delicious twist on the viral onion boil. Tender onion, garlic, and sweet cherry tomatoes are slow-roasted in a Dutch oven and cooked to perfection in a rich, spiced butter sauce. Once softened, the ingredients are blended into a silky sauce and tossed with pasta, creating a dish that’s packed with savory, garlicky goodness. Finish it with a sprinkle of fresh Parmesan and parsley for a perfect meal with a comforting kick!
Ingredients for 8 servings
Seasoned Butter
- 8 oz unsalted butter, melted
- 2 teaspoons minced garlic
- 1 teaspoon onion powder
- 1 teaspoon lemon pepper
- 1 teaspoon paprika
- 1 teaspoon Old Bay® seasoning
- ½ teaspoon creole seasoning
- 1 teaspoon dehydrated parsley
- pepper, to taste
- 1 large yellow onion, peeled and cored
- 1 garlic head, with top removed
- 1 lb cherry tomatoes
- 1 lb pasta, cooked
- grated parmesan cheese, for garnish
- fresh parsley, for garnish
Preparation
- Pre-heat oven to 380°F.
- Make the seasoned butter: In a microwave-safe bowl, heat butter in the microwave on high for 45-60 seconds, until melted, do not over heat.
- To the melted butter, add all the dry ingredients and mix until well combined.
- In a 5-quart Dutch oven, add the onion and cherry tomatoes. Cut the top of the garlic and add to the Dutch oven. Pour the butter mixture over the ingredients, cover, and cook in the oven for at least one hour, or until the onion is soft.
- Cook desired pasta to al dente, according to the package instructions.
- Squeeze garlic from the husk and into the cooked ingredients and blend with an immersion blender or blender until smooth.
- Add cooked pasta and mix until well combined.
- Serve and top with fresh Parmesan cheese and garnish with fresh parsley, if desired.
